Mint-chip ‘nice cream’

The Wang’s most favorite… mint-chip nice cream. This happens almost (cough cough) EVERY night… don’t know how proud I am of that… but its the truth… just about every night the blender disturbs half the neighborhood… but just seconds later… you have maybe the best dessert ever. I mean, for being healthy of course. Please try!

Ingredients

3 frozen bananas (peeled of course)
1/2 cup frozen spinach (this is more for color than nutrients so don’t go too crazy)
About 1 cup of almond or coconut milk (depending on how thick you like it… less milk = thick nice cream)
1 tablespoon honey (give or take depending on your desired level of sweetness)
10-12 mint leaves (I have never used too many… just saying!)

Instructions

Blend all ingredients in a high speed blender. Enjoy! We topped ours with cocoa nibs. It was unreal! So good!

 

Mango ‘nice cream’ dessert

Mango nice cream… this is so refreshing! More like a sorbet than ice cream… fruity, smooth and delicious! (Dar you will love!)

Ingredients

3 cups frozen organic mango
1/2 can light coconut milk (trader joes)
1 tablespoon honey (give or take depending on your desired level of sweetness)

Instructions

Blend all ingredients in a high speed blender. Enjoy! We topped ours with coconut… pretty delicious!

 

Chocolate ‘nice cream’ dessert

This one is sure to satisfy all you chocolate lovers! You can make this even richer by adding more cocoa powder… its truly fantastic! Plus… you can always add a few ingredients to add a little variety if plain o’l chocolate isn’t fancy enough for you… say mocha almond fudge (just add a teaspoon of instant coffee and a few chocolate chips!)

Ingredients

3 frozen bananas
3 ice cubes
3 tablespoons cocoa powder (like the kind you cook with)
About 1 cup of almond milk (any type of milk will work great… use a little less for a thicker nice cream)
1 tablespoon agave (give or take depending on your desired level of sweetness)

Instructions

Blend all ingredients in a high speed blender. Enjoy! We topped ours with sprinkles because everything is so much more fun with sprinkles and a dash of cocoa nibs for crunch. Other great toppings are shredded coconut, almonds, peanuts, fresh fruit… I mean really… need I say more?

 

I should note: When making nice cream… you really just need to eye it when you make it. What I mean by that is… take this recipe with a grain of salt… use less milk if you have a really strong blender… you want the consistency as close to ice cream as possible you may need less liquid if your blender is stronger. Cant really mess this up… worse case scenario… use a straw. #firstworldproblem.

‘Nice Cream’ – A.K.A. the bomb dessert!

“Nice Cream” for all of us who LOVE dessert and yet… well… care about our health. This is the new fav in the Wang homestead… Nice cream is about enjoying delicious desserts while simultaneously being “nice” to yourself. It of course has no cream, refined sugar or even a hint of dairy… But it does have FLAVOR. You will need a lot of frozen bananas. I suggest buying them in bulk.

We always ask our local market for the nana’s that ‘wont sell’ because they are so brown. They usually give us an insane discount and waa laa… we have a dessert for about .50 cents. I hope you have such luck too. In order to prep for this upcoming week of nice cream recipes, I suggest you peel those nannies and freeze them so that when the urge comes upon you, you won’t have to resist!

DD Wraps a.k.a. taco wrap with cauli-rice

My dear friend Dar loves loves loves lettuce wraps. As Rob and I were assembling this delicious dinner I could not get her off my mind. So we called them the “DD wraps” in honor of our lovely friend, Dar. She is refreshing and and light and amazing… just like these wraps.

Full of color and flavor… not to mention a HOST of nutrients! Dig in!

Ingredients

1 lb of ground organic turkey
1 packet of trader joes taco seasoning (or any taco seasoning)
1 (32 oz) can of tomato sauce (OR use the pizza sauce recipe from previous post…using a little less honey… in my personal opinion… this makes this dish exceptional! And only takes about five more minutes)
1 yellow onion, chopped
1 teaspoon minced garlic
1 head of cauliflower
1 tomato, chopped (optional)
1 head of iceberg lettuce
1 jar of corn salsa (trader joes)
1 avocado
sour cream (optional)

Instructions

Grind the cauliflower into (for a how to, click here) cauliRICE. (This can be done the day before or morning of to save time. Just keep in a bowl, covered in the refrigerator.)

Use half the chopped onion and 1 teaspoon garlic, sauteing for about 5 minutes (you can use oil if using a non-stick pan).

Then add the cauliRICE with half a packet of taco seasoning (should be about 2 tablespoons worth of seasoning) and saute for another 5 minutes.

Add about 1 1/2 -2 cups of tomato sauce to the cauliRICE, stir, cover and let simmer for about 5 minutes. Stir again, and simmer for remaining 5 minutes. (Total 20 minutes in the pan). You can eye it here… if you prefer it to be softer, give it a little more time. This is pretty hard to mess up. My kind of dish!

Meanwhile, saute the rest of the yellow onion in a separate pan until soft.

Add the ground organic turkey and the remaining half packet of taco seasoning, and cook until browned (about 5 minutes)

Add the remainder of tomato sauce (about 2 cups worth) and simmer for about 15 minutes.

Rinse the lettuce leaves and make “cups” out of the lettuce (you cant be a perfectionist here).

Add cauliRICE, top with ground turkey. Add corn salsa, avocado and organic sour cream (if you are not dairy free, the sour cream adds an amazing touch to these tacos.) Enjoy!

 

Side note: You can prepare the cauliRICE and ground organic turkey the day before, keep in an airtight container in the refrigerator and serve the next day with very little time and prep. This is a great option for a dinner party.
